Shepherd's Pie
Shepherd’s pie is essentially cooked ground meat in sauce or gravy topped with mashed potatoes and baked in the oven until the potatoes are golden brown. It's easy to prepare and considered wholesome comfort food. There are many variations of Shepherd's Pie so it can be served on its own as a complete meal or it can be served with vegetables or a salad.

Serves 4-6
Ingredients
For the mash:
3 medium red potatoes
1/2 teaspoon salt
1/2 cup milk
1/2 stick of butter
1 beaten egg white to glaze
For the meat mixture:
1lb ground meat (beef or turkey)
1 medium onion, diced
1 garlic clove, crushed
1lb mixed vegetables, fresh or frozen*
1/2 cup tomato puree
Salt and pepper to taste
*Boil frozen vegetables for 10 minutes.

Wash, peel, and dice the potatoes and place into a saucepan. Add 1/2 teaspoon of salt and leave to boil until cooked.

Place the potatoes in a bowl and mash. Add the milk and butter and mix until creamy.

Preheat the oven on to 350°F. Heat a skillet and brown the meat. Add the onion, garlic, and mixed vegetables and stir continuously until tender. Stir in the tomato puree.

Pour the cooked meat mixture into an oven dish and level out.

Cover the cooked meat with the mashed potatoes and again level out. Glaze with beaten egg and place in the preheated oven for 20-25 minutes or until golden brown.

Serve on its own or with a side of vegetables. or salad
